To make the chicken quesadillas, place a tortilla in a frying pan on medium heat.
Add shredded Monterey jack cheese and diced chicken to the tortilla.
Drizzle chipotle lime sauce over the tortilla. Fold the tortilla over and continue cooking on each side.
Serve chipotle chicken quesadillas with a side of chipotle lime sauce, sour cream, or guacamole.
