4 Recipes using cookie cutters

Can you shape cookie dough by hand

Yes. Roll out your dough to 1/4″ thickness. Then use a glass upside down to cut a piece of dough that’s even.

  • Use your fingers and pinch the dough to make points
  • Use a fork to make decorations on the top of the dough
  • Use a butter knife on a cutting board to cut the dough – a butter knife is better than a serrated because a serrated can cause jagged edges. A butter knife will give you a smooth finish
  • Use your fingers to mold the dough into the shape you want by stretching and pulling the dough

How thick is 1/4 inch dough

1/4 inch dough is about half a macaroni length in thickness.

Extra Long Wooden Rolling Pin

A Turkish rolling pin is an extra long wooden rolling pin that is over 30” long rolling pin.

You can find an extra long rolling pin by Bulut that is 35″ long, and only 3/4″ in diameter.

This is one of the classic Turkish Oklava rolling pins.

Baklava (phyllo pastry dough), dumplings, and tortillas are rolled into very thin doughs ~2 mm or less before baking.

To create these thin doughs, having an extra long rolling pin will make it much easier to roll out. The larger the rolling pin, the more surface area the dough has to expand.

These types of dough are light, and will move freely as you press your rolling pin into the dough.

One dough in particular, phyllo pastry dough is especially difficult to make. Phyllo pastry takes a long time to master because the dough becomes substantially large and paper thin.

Phyllo pastry is created by rolling out the dough to it’s final dough thickness – as thin as you can make it. Phyllo pastry requires you to add flour/corn flour to your dough as you continuously roll it out thinner and thinner. The phyllo dough will become as long as your rolling pin.

If you’re working with a rolling pin half the size, it will take you twice as long to roll out your dough. You might not get your dough to the required thinness needed for phyllo using a short rolling pin.

The sheets of phyllo dough are then stacked together to make layers of fat and dough.

Phyllo pastry is used to bake many delicate pastries by manipulating it into different shapes and adding fillings in the center of the dough before baking.

Pasta dough can also be rolled out using an extra long wooden rolling pin. Pasta dough requires the dough to be thinner than paper, which is easily achieved using a pasta maker. A pasta maker squishes the dough together, making it thinner and thinner, working the dough until it’s a uniform thickness.

In a pinch, an extra long rolling pin will help you roll out your pasta dough into thin sheets. You will not get it as thin as a pasta maker, but you can use a rolling pin if necessary.

Lavash Armenian Flatbread becomes quite large and thin when it’s rolled out to ~35 inches long. By using an extra long rolling pin it will save you time rolling out your dough to the suggested length.

Best Solid Wood Rolling Pin

The best solid wood rolling pin is Ateco Professional Solid Wood Rolling Pin.

Ateco Solid Wood Rolling Pin
Solid wood - maple
Heavyweight
Cylindrical or French
Hand wash only

Ateco’s solid wood rolling pin is made to last you a lifetime.

Ateco creates highly specialized professional quality baking accessories for pastry chefs and has done so for over 100 years.

Ateco’s rolling pins are made of solid maple wood. Their solid wooden rolling pin is heavier than your average rolling pin weighing in at 1.5 lbs for their 18″ rolling pin.

Having a heavier rolling pin is helpful when you’re trying to roll out cold laminated dough like puff pastry or croissant dough.

There will be a lot of resistance when you’re trying to roll out these doughs. Heavier rolling pins help with forcing the dough down for you, so you don’t have to use as much pushing motion.

The surface of the Ateco rolling pin is very smooth, so you don’t need to add too much flour to your dough or rolling pin to effectively roll out your dough.

If your rolling pin has more of a rough surface then you have to add quite a bit of flour to the rolling pin to smooth it out first. If you don’t add enough flour to the rough surface, your dough will stick to the rolling pin.

Ateco’s rolling pin has an exceptionally smooth surface, so you will only need to dust the rolling pin lightly with flour before rolling out your dough.

Ateco’s solid wood rolling pin comes in a few different sizes – 12″, 15″ or 18″ plus the length of the handles.

How to use a French rolling pin

To use your French rolling pin, you’re going to be putting pressure on the center of the rolling pin.

  1. Place your dough on a floured surface.
  2. Flour the top of your dough, and flour your French rolling pin.
  3. Place your French rolling pin on top of your dough and begin rolling out your dough by pressing down with the base of your hand and pushing it away from you.
  4. Press the dough with the base of your hands and roll the pin back towards you.
  5. Repeat this motion until you have rolled out your dough with your French rolling pin to your exact thickness needed. Be sure to add flour to your dough and your French rolling pin as needed.

French rolling pin vs Regular rolling pin

French Rolling Pin vs Regular Rolling Pin
TaperedCylindrical
Direct PressureIndirect Pressure through using handles
More controlLess Control
Gentle on doughMore forceful on dough
Unable to use thickness ringsAble to use thickness rings

A regular rolling pin is cylindrical shaped whereas a French rolling pin is tapered.

A French rolling pin is tapered, therefore you need to put pressure on the center because it doesn’t have any handles.

With a French rolling pin you have more control with it because you are applying direct pressure with your hands in the center of the rolling pin.

A regular rolling pin has handles, which is where you will be putting pressure. You’re sandwiching the dough with a regular rolling pin to force it to roll out.

A French rolling pin is more gentle on the dough because it has direct pressure, versus indirect pressure.

Should you wash a rolling pin?

You should wash your rolling pin with a damp cloth to gently wipe away the excess flour on your rolling pin.

Do not soak the rolling pin in water as this will warp the wood and cause it not to be even. Water will penetrate the wood and potentially crack the rolling pin as well.

Use a soft cloth with a bit of water to wash your rolling pin.

Do you need to oil a rolling pin?

If your rolling pin becomes too dry over the years of use, you can use mineral oil to oil your rolling pin.

Mineral oil acts as a barrier between water and other foods. This will keep your rolling pin from drying out when you wash it.

Putting mineral oil on your rolling pin will keep food and bacteria out of your rolling pin, resisting mold and bacterial growth.

Typically you should oil your rolling pin every 2-3 years depending on usage.

Best Marble Rolling Pin

The best marble rolling pin is the Chefmade 18” marble rolling pin.

The Chefmade marble rolling pin weighs over 2 lbs, making rolling out stiff, cold, laminated dough much easier than a light wooden rolling pin.

  • Ergonomic wooden handle design
  • Smooth marble surface for rolling
  • Wooden holder for marble rolling pin to rest in when not in use

Always keep your marble rolling pin resting in the holder when not in use. Marble rolling pins are prone to chipping, so keeping it in it’s holder should make it last you for a long time.

Marble vs Wood Rolling Pin

Marble rolling pins are best used for butter lamination dough recipes, like puff pastry, or croissant dough.

81 layers of butter for croissant dough

Marble is able to sustain its temperature. Pastry chefs can place their marble rolling pin in the fridge, along with their pastry dough. When they’re ready to laminate their pastry, the marble rolling pin is able to keep its cold temperature. This is ideal for laminating dough. Laminating cold dough is critical for puff pastry and croissant dough because the butter inside needs to be kept cold, otherwise it will break through the dough.

Marble vs Wood Rolling Pin

Marble is particularly heavy, making it much easier to roll out cold laminated dough than a light wooden rolling pin.

Wooden rolling pins are best used for cookie dough, pizza dough, bread, and buns.

Wooden rolling pins are not as heavy as marble rolling pins. Therefore, you need to use more force to roll out dough using a wooden rolling pin.

Wooden rolling pins are ideal for recipes that need flour to adhere to the rolling pin as you roll out the dough. Flour clings to wooden edges easily. Your dough will roll out nicely without having it stick to the rolling pin.

How do you keep dough from sticking to marble rolling pins

Marble rolling pins have a particularly smooth surface, making it difficult for flour to stick to the marble rolling pin. Add a dusting of flour to your dough instead, and then use your marble rolling pin to roll out your dough. The dough will not stick to your marble rolling pin as long as your dough is floured enough for it to be rolled out. Add more flour as needed.

If adding more flour to your dough isn’t working very well, you can place a sheet of parchment paper on top of your dough and then roll it out. The parchment paper will act as a barrier in between and will not stick to your rolling pin, or your dough. Peel the parchment paper from your dough when you’ve finished rolling it out.

How to make pie art using cutouts

How to clean a marble rolling pin

Clean a marble rolling pin by using a cloth and bit of water to rub it clean.

Only if necessary, use a bit of dish soap to clean off residue that will not clean off with water.

Marble rolling pins are the best rolling pins for making croissants and pastry dough. They are able to keep their cold temperature throughout the rolling and laminating process, unlike wooden rolling pins. Pastry dough and croissant dough are very temperature sensitive. Marble rolling pins are able to keep that consistent temperature and smoothness needed to create these delicious pastries.

You can easily roll out your dough to the precise measurement needed for your recipe using their 5 different rolling pin measuring rings in sizes 2mm, 4mm, 6mm, 10mm and 13mm.

croissant dough

What are rolling pin rings?

Rolling pin rings are used to roll out dough to specific measurements.

Rolling pin rings are made to sit on either end of the rolling pin, elevating the rolling pin to the exact measurement.

The rolling pin is then used to roll out the dough until it’s the exact measurement, and no further, creating an evenly rolled dough for your recipe.

Rolling pin rings will work best on an even, cylindrical rolling pin.

Do not use them on a French rolling pin that is tapered.

You can also find silicone rolling pin rings that will stretch to fit over your rolling pin.

Boao makes a set of rolling pin thickness rings in 0.4”, 0.2”, 0.08” and 0.04” sizes.

The inside diameter of the rings is 1.6” so be sure to measure the width of your rolling pin to see if they will fit over.

How do rolling pin rings work?

Rolling pin rings work by elevating the rolling pin to an exact measurement.

The rolling pin rolls the dough out to the specific measurement, not any less than the rolling pin ring because the rubber holds the rolling pin up from squishing it any more.

  1. Place your rolling pin rings on either end of your rolling pin.
  2. Put your dough on your floured countertop and roll the dough with it being centered under the rolling pin.
  3. Roll out the dough until it matches the exact height of your rolling pin. You’ll know it’s ready if it doesn’t seem to be stretching any further as you roll.
  4. Your dough is ready to use!

How do you roll dough evenly?

To roll dough evenly, place your rolling pin rings on either side of your rolling pin. Place your dough on a floured surface and begin rolling out your dough. Roll your dough until it won’t spread any further. Your dough is even throughout because the rolling pin ring holds the rolling pin to the precise measurement of the ring.

You might need to roll your dough out more lengthwise, because the rings will make the width of your dough no more than the length of your rolling pin. Keep this in mind if you’re making a recipe that needs an exact measurement for both width and length.

Rolling pins with measurement rings make it easy to roll out your dough evenly to an exact measurement. Use your measurement rings on your rolling pin when making dough for sugar cookies, pastry crust, shortbread, and gingerbread.

How to use a Pastry Blender

A pastry blender is used for cutting fat into flour. A pastry blender is a tool that bakers use to cut fat into small pieces for a buttery flaky effect for specific baked goods.

What is a good substitute for a pastry blender

A good substitute for a pastry blender is 2 butter knives. Use the knives parallel to each other and cut away from each other. This should create strips of butter. Turn the bowl in the opposite direction and repeat until you’re butter is in pea sized pieces.

Is a pastry blender necessary

A pastry blender is necessary for recipes like scones and pie crusts. You can use alternatives, but it will take you longer, and you may not be able to cut the butter as small. Pastry blenders are able to cut butter into the appropriate sizes effortlessly.

What can you use instead of a pastry blender

Instead of a pastry blender, you can use 2 butter knives to cut your butter into small pieces for your recipe. Alternatively, you could use a potato masher, but it’s very difficult when the butter is cold. Typically when you’re cutting in fat to flour, you want the butter cold, so try the 2 knives method first.

What does a pastry blender make?

A pastry blender makes fat (butter, etc.) into small pieces in baking recipes. A pastry blender makes scones and pie crust flaky.

What is a pastry blender used for

A pastry blender is used for baking scones and pie crust. The butter is cold when you’re adding it to your recipe – coarse crumbs of butter.

A pastry blender creates a flaky effect with the butter for your baked goods. A pastry blender cuts fat into small pieces which melt in your dough. This creates a thin layer of fat which flakes the pastry dough.

For recipes that have cut in fat, the dough is not meant to be manipulated too much. It’s meant to be only mixed until just combined. If you mix too much the dough will be too stiff. Only mix until it’s combined, and stick it in the oven to bake. When it comes out of the oven, you’ll see the flakes of butter have melted into your pastry.

What does a pastry blender look like

A pastry blender looks like a U shape, with slats of metal on the bottom end. The separated slats of metal cut hard butter to create smaller pieces resembling coarse crumbs.

What is a bench scraper

A bench scraper is a kitchen tool that removes food from your countertop in a scraping motion. A bench scraper has a handle on top to ergonomically scrape the food off of the countertop into the garbage or a green bin. The handle is attached to a rectangular piece of metal which gently scrapes your countertop of food bits, without damaging your countertop.

Best Pastry Scraper

What do you use a bench scraper for?

A bench scraper is used mainly for people that use flour on their countertop to roll out dough. The flour sticks to the countertop which can make it difficult to remove. A bench scraper easily removes the flour from the countertop. After the majority of the flour has been removed with the bench scraper, a cloth can be used to wipe the countertop clean.

How do you use a food scraper?

A food scraper is used by placing the metal portion onto the countertop at a 45 degree angle and scraping food off of the countertop onto a green bin. This can be helpful if you’re doing a lot of prep work prior to a meal. You can place your excess vegetable cuttings that you won’t be using for your recipe onto your countertop, and then use your scraper to scrape the excess into a green bin. Cleanup is much quicker than placing every bit into the green bin after cutting each vegetable.

You can also use your food scraper to place your vegetables into your pan as you’re preparing them. Push your vegetables onto your metal scraper, holding the scraper horizontally. Then take your scraper to the pan and gently place them into your recipe.

How do you use a dough scraper?

To use a dough scraper, place the metal onto your countertop at a 45 degree angle. Scrape the dough off of your counter by dragging the metal on your countertop. You don’t need to use force, just gently drag it across your countertop. Scrape the dough off of the countertop into a green bag for easy clean up.

A dough scraper can also be used to cut dough into separate pieces. Using a firm grip on the dough scraper, cut the dough by placing the metal down into the dough until it cuts through the dough. This can be helpful when separating dough for bagels, buns, etc.

How do you use a dough scraper?

Do you need a bench scraper?

People who need a bench scraper are typically those who make a lot of their own foods.

You need a bench scraper if you:

  • Roll out pizza dough
  • Roll out cookie dough and use cookie cutters
  • Make scones
  • Make croissant dough
  • Make bread dough
  • Do a lot of preparation for recipes – chopping and preparing vegetables
Do you need a bench scraper?

A bench scraper makes cleaning up much easier by removing flour from your countertop in just a couple of strokes. This way, you don’t get your cloth dirty immediately when wiping your counters, and make your countertop even more dirty by using a flour soaked cloth. By using a bench scraper first, you can use your cloth right after to only wipe the remnants of flour off of your counter.

A bench scraper makes it easy to gently place vegetables into your recipe from your cutting board. Instead of taking your whole cutting board over to your pan, you can place your vegetables onto your bench scraper and then place them into your recipe seamlessly.

Best Sifter for Powdered Sugar

The best sifter for powdered sugar is the 9″ Large Fine Mesh Strainer from Yummy Kitchenware

  • Fine mesh
  • Ergonomic handle
  • Rounded edge – prevents food from being trapped
  • Made with a hook opposite the end of the handle – sifter can be placed on top of a bowl to rest
  • Dishwasher safe

What is a sifter used for

A sifter is used for breaking up lumps of food into smaller pieces. A sifter has a mesh basket that you can place food into. By gently tapping the side of the mesh basket, the broken up lumps of food will fall through the mesh creating smaller pieces. A fine mesh sifter will make the food into a powder. Powdered sugar is frequently used to top desserts to give it a finishing touch using a fine mesh sifter.

Why do you have to sift powdered sugar

Powdered sugar is an ingredient that ends up turning into clumped balls of sugar. This will not be evenly distributed sugar throughout your recipe. Make sure to sift your powdered sugar, then measure out your amount and add it to your recipe. Any excess sifted powdered sugar can be placed back into its container to reuse in the future. Learn how to dust powdered sugar on your favorite desserts.

What does it mean when a recipe calls for sifted flour

When a recipe calls for sifted flour, it’s asking you to first sift enough flour for your recipe into a bowl. Take your measuring cups and gently spoon the sifted flour into your measuring cups. Level off the excess of sifted flour using a flat surface, like the back of a knife. Once you’ve sifted and measured your flour, you can place it into your recipe.

Recipes that ask for sifted ingredients are measured after you have sifted them. You always need to measure your ingredients after you have sifted them because if you don’t, you’ll have measured too much more your recipe. Sifting your ingredients adds air to the food. Sifting makes food light and fluffy, not packed and dense. When you sift a food this increases the surface area of the food, giving it a lighter feel to it. Be careful spooning, measuring, and leveling off your freshly sifted ingredients. Keep all of the air by gently measuring your sifted ingredient.

What is the meaning of pre-sifted flour

Pre-sifted flour has already been sifted before packaging. By pre-sifting flour, this makes the manufacturer be able to put less flour into their package since the flour is not packed densely into the packaging.

Do you have to sift pre-sifted ingredients

If you’ve purchased pre-sifted ingredients, you still need to sift your ingredient again for your recipe. Once the ingredient has been sitting for awhile, or moved in transit, it’s likely the food has become dense and clumped. Use your sifter to sift your ingredient, and then measure for your recipe is best practice.

Can you use a flour sifter for powdered sugar

Yes. You can use the same flour sifter as you do for your powdered sugar.

How to measure powdered sugar

You can measure powdered sugar by measuring it after sifting. Spoon the powdered sugar and place it into a measuring cup. Level off the excess powdered sugar by using a flat surface (back of a knife) to push off the excess powdered sugar.

You can measure powdered sugar by measuring it by weight. After you have sifted your powdered sugar, you can spoon it into a bowl on a kitchen scale to measure it’s weight for your recipe.

Stainless Steel vs Glass Mixing Bowls

Are stainless steel or glass mixing bowls better

Stainless Steel Mixing Bowls Glass Mixing Bowls
Transfers temperature to food - best for whipping stiff peaksTolerates high heat
Hand washing recommendedDishwasher safe
No acidic foodsAcidic foods ok`
LightHeavy
Scratches and dents possibleChipping possible

Temperature

Glass mixing bowls can tolerate high heat, and can be used with acidic foods. Glass mixing bowls can be used in the microwave, unlike stainless steel mixing bowls. This makes baking easier when you need to start your recipe with melted butter. It saves you a step having to get a new bowl out to microwave butter, and then having to place it in your stainless steel mixing bowl.

Glass such as Pyrex are made of borosilicate glass. The makeup of borosilicate glass allows it to resist stresses like thermal shock or thermal expansion. This type of glass is also used by labs and household cookware since it will tolerate high heats without cracking.

Stainless steel mixing bowls are able to transfer their temperature to the food they are carrying better than glass. When mixing foods that are cold such as egg whites or whipping cream, a stainless steel bowl is preferred. The bowl will become the same temperature as the food and will hold the temperature, allowing the food to be whipped to stiff peaks better than a glass bowl.

Dishwasher Safe

Stainless steel mixing bowls are dishwasher safe, but it is recommended that they are hand washed to prolong the life of the bowl. Glass bowls are easily washed in a dishwasher, with no need to hand wash them.

Damage

Stainless steel does have a tendency to get scratches and dents, whereas glass mixing bowls can get chips in them over time. Be sure to monitor your glass mixing bowl before using it to ensure it’s free of any chips before using it.

Stainless steel mixing bowls are resistant to stains and can be used for everyday use, not just with your stand mixer.

Heavy vs Light

Stainless steel mixing bowls are light and can be easily placed onto your stand mixer.  Glass mixing bowls are much heavier, and will ensure your stand mixer remains in place. If you are using your stainless mixing bowl and vigorously mixing, it has the potential to be unsteady on your countertop.

Bonus Uses

Stainless steel bowls are preferred when using a double boiler as well. The high heat from the steam created by the boiling water will transfer to the stainless steel bowl. Stainless steel is a low conductor of heat which is ideal for making custard. The slowly heated bowl does not overcook the eggs needed for custard, making it the perfect choice for a double boiler.

Glass mixing bowls can be used for mixing other baked goods, and not just for your stand mixer. Glass mixing bowls come in handy when making dips and sauces.

When not to use metal mixing bowls

Do not use metal mixing bowls for foods that are high in acidic. Do not use metal mixing bowls for citrus, tomatoes, apricots, rhubarb, or vinegar. It’s best to use a glass or ceramic mixing bowl when baking rhubarb crisp, apricot pies, or lemon tarts.

Mixing bowls with measurements inside

You can find glass mixing bowls with measurements you can easily ready from the inside. Since glass is transparent, you can read the measurement markings on the outside as well.

Glass mixing bowls with measurements on the outside are difficult to find. If you’re lucky you can find one with a lid that fits on top.

Glass mixing bowls and Stainless steeling mixing bowls have their place in the kitchen. Depending on what you plan on baking with your mixing bowls, you could select either one. Stainless has more drawbacks when it comes to foods you can use in your mixing bowl. But stainless steel is a necessity when whipping cream or egg whites. Glass mixing bowls can be used with any type of food, but will struggle when using it for whipping egg whites or whipping cream. Glass mixing bowls are versatile and heavy duty for your every day use.
