How to Make Candied Nuts with a sugar syrup
Roast nuts for 10 minutes at 350 degrees F on a baking sheet lined with a silicone baking mat or parchment paper.
Remove the nuts from the oven and let them cool a little.
Begin your sugar syrup using a 1:2 ratio of water to sugar for making candied nuts.
The sugar syrup can have many different spices added to it. You can add any spices that you like at this point.

Candied nuts are coated in this sugar syrup mixture and then cooked over medium heat in a saucepan. Typically the nuts should be cooking in the sugar syrup for at least 5-10 minutes.
Pour the candied nuts onto a baking sheet lined with a silicone baking mat or parchment paper.

How to Make Candied Nuts with egg whites
To make your candied nuts using egg whites, beat 1-2 egg whites on high until stiff peaks form. It should take about 5 minutes until the peaks are stiff enough. Make sure to keep checking on them after 3-4 minutes. If your peaks “fall” they are only soft peaks. Keep mixing them until the peaks don’t move when you remove the beaters from the egg whites.
Add your spices to your egg whites and mix well.
Coat the nuts in the egg white and spice mixture.
Roast the nuts for 25-45 minutes at 300 degrees F until toasted to your liking. Stir the nuts every 10-15 minutes to make sure they are fully roasted on each side.
Remove the nuts from the oven and let them cool to room temperature.
Using egg whites for candied nuts gives the nuts more of a white look to them. Make sure this is the look you want before making your recipe with egg whites.
